- 1 bunch parsley
- 3 cloves garlic
- 1 green chili, deseeded
- 1 glug tequila
- Pinch salt
- 1/4 tspn sugar
- Glug of olive oil
- 2 limes
- 1 corn cob
- 500g sirloin or your fave steak
- 1 ripe avocado
- 1 eschalot, finely diced
- 8 tortillas
- Blitz parsley, 2 peeled garlic and 1/2 chili in food processor.
- add tequila, salt, sugar, oil and zest and juice of 1 lime. Blitz
- rub over your steak and leave for up to 24hrs
- bring bbq or grill plate to high heat. Char corn all over. Set aside
- Grill steak 3-4 min each side, depending on thickness. Set aside to rest
- cut kernels off corn and stir through mashed avo, eschalot , diced 1/2 chili and juice of lime
- grill tortillas for 30sec each side
- thinly slice rested beef (ideally beltie for most flavour)
- enjoy.
